I always thought of Tzatziki Sauce as something you ate strictly with Mediterranean food, but I was so wrong! While it is amazing with Mediterranean cuisine, it is also delicious as a chip and veggie dip! This healthy recipe can be made with greek yogurt, or I also include a Whole30 and Paleo Recipe version.
Wash and finely dice your English cucumber (English so you don't have to mess with the seeds). Squeeze out your excess water from your diced cucumber if you plan to serve this Tzatziki Sauce the next day (this will keep it from getting too thin overnight).
Chop your fresh dill, and press your garlic cloves.
Measure out your Greek Yogurt into a serving bowl (see notes for Paleo & Whole30 version).
Mix your greek yogurt (or paleo sub), olive oil, juice of a lemon, juice of a lime, cucumbers, fresh dill, pressed garlic, pink salt, garlic powder, and pepper. Taste and add a dash more pink salt or pepper if desired.
Serve your Tzatziki Sauce immediately or refrigerate overnight for an even more intense flavor.
Whole30 and Paleo Tzatziki Sauce - Sub greek yogurt for 1/2 cup coconut cream (not milk) and 1/2 cup paleo mayonnaise. The entire coconut cream must be blended before measuring out the 1/2 cup. If you do not want to make or buy paleo mayonnaise you can do a full cup of coconut cream (it will be really thin).
